Southwest Beef and Chile Pizza

Ingredients:

  • 1 pound extra lean ground beef
  • 1 thick prebaked Italian bread shell (12" diameter)
  • 1¼ cups mild thick and chunky salsa
  • 1½ cups (6 oz) shredded lowfat Monterey Jack cheese
  • 1 can (4 oz) diced green chiles, drained well
  • 2 medium plum tomatoes, seeded, coarsely chopped
  • 1/3 cup thin red onion slivers
  • 2 Tablespoons chopped fresh cilantro

Directions:

  1. Heat oven to 450 degrees.
  2. In large skillet, brown ground beef over medium heat 8 to 10 minutes or until no longer pink, breaking up into ¾" crumbles.
  3. Pour off drippings.
  4. Place bread shell on ungreased baking sheet.
  5. Spread salsa over shell; sprinkle with ½ of cheese.
  6. Top with beef, chiles, tomatoes, red onion and remaining cheese.
  7. Bake in oven 11 to 13 minutes or until cheese is melted.
  8. Sprinkle with cilantro; cut into 8 wedges.
