Peanutty Vegetable Medley

 

Ingredients:

  • 8 ounces couscous, rice, or pasta
  • 2 teaspoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces tomato sauce
  • ½ cup water
  • 2 teaspoons chili powder
  • 2½ pound head of cauliflower, broken into florets
  • 2 carrots, cut into ½ inch slices
  • 1 green pepper, sliced
  • ½ cup regular or reduced-fat creamy peanut butter

Directions:

  1. Cook couscous, rice, or pasta and keep warm.
  2. In a large saucepan, heat oil over medium-high heat.
  3. Add onion and garlic and cook 3-5 minutes, stirring often.
  4. Stir in rest of ingredients except peanut butter and bring to a boil.
  5. Reduce heat, cover, and simmer 15 minutes.
  6. Stir in peanut butter and simmer 5 minutes longer, covered.
  7. Serve over couscous, pasta, or rice.

Optional: Sprinkle with chopped peanuts.
