Mexicali Snack Mix

Here's a great after school snack idea:

Ingredients:

  • 1 Tablespoon margarine
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 1/8 teaspoon garlic powder
  • 2 cups reduced-fat cheese crackers
  • 2 cups small pretzels
  • 1/3 cup cashews
  • ½ cup seedless raisins

Directions:

  1. In 300° F oven, melt margarine in 13 x 9 x 2-inch baking pan.
  2. Remove from oven; stir in chili powder, cumin, and garlic powder.
  3. Add cheese crackers, pretzels, and cashews; toss until well coated with margarine mixture.
  4. Bake for 15 minutes, stirring twice; remove from oven.
  5. Stir in raisins; spread on paper towels to cool.

Yield: 5 cups
