Pistachio Butter on Crisp Apple Wedges

Ingredients

  • ½ cup pistachios
  • 1 Tablespoon honey
  • ½ teaspoon grated lime peel
  • 1 Tablespoon lime juice
  • ¼ cup golden raisins
  • 6 (8 ounce) apples

Directions

  1. Combine all ingredients except apples in food processor; process until blended to a paste or butter.
  2. Slice apples into 10 wedges and core.
  3. Spread each wedge with 1/3 teaspoon of pistachio butter. Serve promptly.
  4. If desired, use an electric blender to prepare pistachio butter.
  5. First blend pistachios, pulsing on and off at 3-second intervals until ground.
  6. Add honey, lime peel, lime juice, and raisins, and pulse on-and-off until blended.

Makes 6 servings.

Nutrition information per serving: One serving equals 1 apple and 3 1/3 teaspoons pistachio butter.
