Pistachio Butter on Crisp Apple Wedges
Ingredients
- ½ cup pistachios
- 1 Tablespoon honey
- ½ teaspoon grated lime peel
- 1 Tablespoon lime juice
- ¼ cup golden raisins
- 6 (8 ounce) apples
Directions

Combine all ingredients except apples in food processor; process until blended to a paste or butter.

Slice apples into 10 wedges and core.

Spread each wedge with 1/3 teaspoon of pistachio butter. Serve promptly.

If desired, use an electric blender to prepare pistachio butter.

First blend pistachios, pulsing on and off at 3-second intervals until ground.

Add honey, lime peel, lime juice, and raisins, and pulse on-and-off until blended.
Makes 6 servings.
Nutrition information per serving: One serving equals 1 apple and 3 1/3 teaspoons pistachio butter.
