Fresh Green Beans with Water Chestnuts

Ingredients:

  • 1½ pounds fresh green beans, trimmed (about 5 cups)
  • 2 teaspoons vegetable oil
  • 1 teaspoon hot-pepper oil
  • 8 ounce can sliced water chestnuts, drained
  • 2 Tablespoons sesame seeds, dry-roasted
  • ½ teaspoon salt

Directions:

  1. In a large saucepan over high heat, bring to a boil enough water to cover beans.
  2. Meanwhile, cut beans diagonally into 1½ inch pieces.
  3. Boil beans for 4 minutes.
  4. Drain and plunge into ice water to halt cooking. Drain.
  5. In a large skillet, heat oils over high heat, swirling to coat bottom.
  6. Stir-fry water chestnuts for 1 minute.
  7. Add sesame seeds, beans, and salt.
  8. Cook until thoroughly heated, stirring constantly.
