Fresh Green Beans with Water Chestnuts

Ingredients:
- 1½ pounds fresh green beans, trimmed (about 5 cups)
- 2 teaspoons vegetable oil
- 1 teaspoon hot-pepper oil
- 8 ounce can sliced water chestnuts, drained
- 2 Tablespoons sesame seeds, dry-roasted
- ½ teaspoon salt
Directions:

In a large saucepan over high heat, bring to a boil enough water to cover beans.

Meanwhile, cut beans diagonally into 1½ inch pieces.

Boil beans for 4 minutes.

Drain and plunge into ice water to halt cooking. Drain.

In a large skillet, heat oils over high heat, swirling to coat bottom.

Stir-fry water chestnuts for 1 minute.

Add sesame seeds, beans, and salt.

Cook until thoroughly heated, stirring constantly.
