Tasty Apricot Muffins

Ingredients:

  • 4 cups all-purpose flour
  • 1- ¼ cups soy flour
  • ¾ cup sugar
  • 2 Tablespoons plus 1-½ teaspoons
  • baking powder
  • 2-½ teaspoons ground cinnamon
  • ¾ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 3 eggs
  • 1-¼ cups soy milk
  • 1-¼ cups water
  • 2 Tablespoons plus 1-½ teaspoons soybean oil
  • 1-¼ cups crushed, canned pineapple with juice
  • 1-¼ cups dried apricots, diced

Directions:

  1. Combine flours, sugar, baking powder, spices, and salt; mix well.
  2. Make a well in center of dry ingredient mixture and add eggs, soy milk, water, oil, pineapple, and apricots; mix only until moist.
  3. Spoon mixture into lined or oiled muffin tins.
  4. Bake at 400 degrees for 12 to 15 minutes or until inserted wooden pick comes out clean.

Yield: 24 muffins
