Tasty Apricot Muffins

Ingredients:
- 4 cups all-purpose flour
- 1- ¼ cups soy flour
- ¾ cup sugar
- 2 Tablespoons plus 1-½ teaspoons
- baking powder
- 2-½ teaspoons ground cinnamon
- ¾ teaspoon ground nutmeg
- ¼ teaspoon salt
- 3 eggs
- 1-¼ cups soy milk
- 1-¼ cups water
- 2 Tablespoons plus 1-½ teaspoons soybean oil
- 1-¼ cups crushed, canned pineapple with juice
- 1-¼ cups dried apricots, diced
Directions:
- Combine flours, sugar, baking powder, spices, and salt; mix well.
- Make a well in center of dry ingredient mixture and add eggs, soy milk, water, oil, pineapple, and apricots; mix only until moist.
- Spoon mixture into lined or oiled muffin tins.
- Bake at 400 degrees for 12 to 15 minutes or until inserted wooden pick comes out clean.
Yield: 24 muffins
