Quelites Con Frijoles

Ingredients:

  • 1½ pounds fresh spinach or one 10 oz package frozen leaf spinach
  • 3 Tablespoons chopped onion
  • 1 teaspoon soft tub margarine
  • 1 cup home-cooked pinto beans or 1 cup canned, rinsed and drained
  • ¼ teaspoon crushed red chili
  • ½ teaspoon salt

Directions:

  1. Wash fresh spinach, remove stem ends and steam for 10 minutes.
  2. If using frozen spinach, steam for 8 minutes.
  3. In a medium saucepan, sauté onion in margarine until soft and transparent.
  4. Add drained, steamed spinach, chili, salt and pinto beans.
  5. Cook an additional 5 minutes.

Yield: 8 servings
