Quelites Con Frijoles

Ingredients:
- 1½ pounds fresh spinach or one 10 oz package frozen leaf spinach
- 3 Tablespoons chopped onion
- 1 teaspoon soft tub margarine
- 1 cup home-cooked pinto beans or 1 cup canned, rinsed and drained
- ¼ teaspoon crushed red chili
- ½ teaspoon salt
Directions:

Wash fresh spinach, remove stem ends and steam for 10 minutes.

If using frozen spinach, steam for 8 minutes.

In a medium saucepan, sauté onion in margarine until soft and transparent.

Add drained, steamed spinach, chili, salt and pinto beans.

Cook an additional 5 minutes.
Yield: 8 servings
