Fiesta Scrambler

Ingredients:

  • 2 packages Mori-Nu Lite Tofu (Firm or Extra Firm)
  • 1½  teaspoons olive oil
  • 1/8 teaspoon crushed red pepper
  • 3 scallions, sliced
  • 3 large cloves garlic, minced
  • ¼  teaspoon turmeric
  • 1/3 cup chopped green bell peppers
  • 1 Tablespoon tamari
  • ¾ cup chunky medium hot salsa, drained
  • 1 Tablespoon lime juice
  • ¼  cup chopped fresh cilantro

Directions:

  1. Drain tofu; pat dry.
  2. Place tofu in a microwave-safe bowl; mash tofu w/potato masher.
  3. Microwave on high for 2½ minutes.
  4. Place tofu in a fine mesh colander; drain.
  5. Heat oil, crush pepper in a frying pan over medium-high heat.
  6. Add next three ingredients; sauté for 3 minutes or until crisp tender.
  7. Add drained tofu; continue to cook for 5 minutes, stirring frequently.
  8. Stir in remaining ingredients.
  9. Reduce heat, simmer 5 minutes.
  10. Serve with whole wheat tortillas and extra salsa.
