Fiesta Scrambler

Ingredients:
- 2 packages Mori-Nu Lite Tofu (Firm or Extra Firm)
- 1½ teaspoons olive oil
- 1/8 teaspoon crushed red pepper
- 3 scallions, sliced
- 3 large cloves garlic, minced
- ¼ teaspoon turmeric
- 1/3 cup chopped green bell peppers
- 1 Tablespoon tamari
- ¾ cup chunky medium hot salsa, drained
- 1 Tablespoon lime juice
- ¼ cup chopped fresh cilantro
Directions:

Drain tofu; pat dry.

Place tofu in a microwave-safe bowl; mash tofu w/potato masher.

Microwave on high for 2½ minutes.

Place tofu in a fine mesh colander; drain.

Heat oil, crush pepper in a frying pan over medium-high heat.

Add next three ingredients; sauté for 3 minutes or until crisp tender.

Add drained tofu; continue to cook for 5 minutes, stirring frequently.

Stir in remaining ingredients.

Reduce heat, simmer 5 minutes.

Serve with whole wheat tortillas and extra salsa.
