Creamy Tapioca Pudding

 

4 servings/Serving size: 2/3 cup

Ingredients:

  • 2 cups skim milk
  • 3 Tbsp. quick-cooking tapioca
  • 1 egg
  • 1/8 tsp. salt
  • 3 ½ tsp. EQUAL Measure or 12 packets EQUAL Sweetener or ½ cup EQUAL Spoonful
  • 1-2 tsp. vanilla
  • Ground cinnamon and nutmeg

Directions:

  1. Combine milk, tapioca, egg, and salt in medium saucepan.
  2. Let sit 5 minutes.
  3. Cook over medium-high heat, stirring constantly, until boiling.
  4. Remove from heat; stir in EQUAL and vanilla.
  5. Spoon mixture into serving dishes; sprinkle lightly with cinnamon and nutmeg.
  6. Serve warm, or refrigerate and serve chilled.
