Anasazi Mixed Vegetables

Ingredients:

  • 1 large yellow onion, diced
  • 1 green bell pepper, seeded and diced
  • 2 small zucchini squash, sliced in ¼-inch slices
  • 2 small yellow squash, sliced in ¼-inch slices
  • 2 cups yellow corn, fresh, frozen, or vacuum-packed
  • 1 (17 oz) can diced tomatoes with juice or 2 cups diced fresh tomatoes
  • 1/8 teaspoon black pepper
  • 2 teaspoons soft tub margarine

Directions:

  1. Sauté onion and bell pepper in margarine in large skillet for 2 minutes.
  2. Add zucchini, yellow squash and corn and continue sautéing over medium-high heat until squash is tender.
  3. Add tomatoes and black pepper and simmer for about 5 minutes.

Yield: 8 servings
