Anasazi Mixed Vegetables

Ingredients:
- 1 large yellow onion, diced
- 1 green bell pepper, seeded and diced
- 2 small zucchini squash, sliced in ¼-inch slices
- 2 small yellow squash, sliced in ¼-inch slices
- 2 cups yellow corn, fresh, frozen, or vacuum-packed
- 1 (17 oz) can diced tomatoes with juice or 2 cups diced fresh tomatoes
- 1/8 teaspoon black pepper
- 2 teaspoons soft tub margarine
Directions:

Sauté onion and bell pepper in margarine in large skillet for 2 minutes.

Add zucchini, yellow squash and corn and continue sautéing over medium-high heat until squash is tender.

Add tomatoes and black pepper and simmer for about 5 minutes.
