Wrap Attack

Ingredients:

  • 2 8-ounce packages fat free cream cheese, softened
  • 1/3 cup mild salsa
  • 2 celery stalks
  • 2 carrots
  • 2/3 cup grated lowfat cheddar cheese
  • 6 flour tortillas (9 or 12 inch)

Directions:

  1. Place softened cream cheese in a mixing bowl.
  2. Add mild salsa and whip with a blender until smooth and creamy.
  3. Spread this flavored cream cheese evenly over each flour tortilla, leaving one inch uncovered at the top and bottom.
  4. Cut the celery and carrot lengthwise and then into 2 inch pieces.
  5. For each tortilla, place celery and carrot sticks in the flavored cream cheese so that they may be rolled up.
  6. Sprinkle grated cheddar cheese over each tortilla.
  7. From the bottom, fold the one inch uncovered part over the covered part and roll.
  8. Cut the roll-up in half; it will look like a pinwheel.
