Italian Broccoli with Tomatoes

Ingredients:

  • 4 cups broccoli florets (fresh or frozen)
  • 1 Tablespoon water
  • ½ teaspoon dried oregano
  • ¼ teaspoon pepper
  • 1 Tablespoon lemon juice
  • 2 medium-ripe tomatoes, cut in wedges
  • ½ cup shredded part skim mozzarella cheese

Directions:

  1. Wash and cut broccoli into ½-inch pieces.
  2. Place broccoli and water in a shallow microwave dish.
  3. Cover with lid or plastic wrap.
  4. Microwave on high for 6 to 8 minutes, stirring twice. They are finished when tender.
  5. Drain the broccoli.
  6. Stir in spices and tomato wedges.
  7. Sprinkle cheese on top. Cover.
  8. Microwave to melt cheese.
  9. Let stand for a few minutes before serving.
  10. Serves six to eight.
