Blueberry Cobbler

Summer fruits make wonderful desserts, either by themselves or cooked in a cobbler like this one.
Ingredients:
- 1½ cups fresh blueberries
- 1 teaspoon cornstarch
- 1 Tablespoon sugar
- ¼ cup flour
- 1 Tablespoon sugar
- ½ teaspoon baking powder
- 1 Tablespoon margarine
- 1 large egg white, lightly beaten
- 1 Tablespoon 2 percent milk
Directions:
- Preheat oven to 375 degrees. Place blueberries in a medium saucepan. Combine cornstarch and 1 Tablespoon sugar. Stir into blueberries and heat slowly over low heat for 5 minutes or until thick. Pour fruit into a 1-quart baking dish.
- Blend together flour, 1 Tablespoon of sugar and baking powder. Cut in margarine with a fork until mixture looks like very small pebbles. Stir together egg white and milk and add to flour mixture, stirring until a soft, slightly lumpy dough is formed.
- Drop spoonfuls of dough over the blueberries. Bake for 20 minutes or until dough is lightly browned and crusty when tapped. Cool for 10 minutes; be careful, the fruit gets very hot.
