Crunchy Oatmeal Wafers

These whole grain cookies make a great snack when you are craving something a little sweet.

Ingredients

  • 1½ cups rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup whole wheat flour
  • ¼ cup firmly packed brown sugar
  • ½ teaspoon cinnamon
  • 1/8 teaspoon salt
  • ½ cup unsalted margarine, melted
  • 1 Tablespoon maple syrup

Directions

  1. Preheat oven to 375 degrees.
  2. Mix together the oats, flours, brown sugar, cinnamon and salt in a medium-sized bowl.
  3. Add the melted margarine and maple syrup to the dry ingredients, mixing well.
  4. Drop the dough by teaspoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake for 8 minutes or until lightly browned.
  5. Remove the cookies from the oven and let them harden on the baking sheets for 2 minutes before transferring to wire racks to cool.
