Orange Carrot Bread

Orange juice and carrots team together to provide vitamin C and beta carotene in this yummy bread. A great way to get your kids to eat vegetables.
Ingredients:
- ½ cup orange juice
- 1/3 cup oil
- ¼ cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 teaspoons cinnamon
- ½ teaspoon cloves
- ¼ teaspoon nutmeg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ¼ cups grated carrots
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine orange juice, oil, sugar, egg and vanilla; set aside.
- In another bowl combine flours, spices, baking powder, baking soda and salt; mix well.
- Add dry ingredients to orange juice mixture, stirring just until dry ingredients are moistened. Fold in carrots.
- Bake in a 9x5x3-inch loaf pan or 8 inch springform pan coated with cooking spray for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
Yield: 1 loaf (12 slices)
