Orange Carrot Bread

Orange juice and carrots team together to provide vitamin C and beta carotene in this yummy bread. A great way to get your kids to eat vegetables.

Ingredients:

  • ½ cup orange juice
  • 1/3 cup oil
  • ¼ cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons cinnamon
  • ½ teaspoon cloves
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cups grated carrots

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine orange juice, oil, sugar, egg and vanilla; set aside.
  3. In another bowl combine flours, spices, baking powder, baking soda and salt; mix well.
  4. Add dry ingredients to orange juice mixture, stirring just until dry ingredients are moistened. Fold in carrots.
  5. Bake in a 9x5x3-inch loaf pan or 8 inch springform pan coated with cooking spray for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.

Yield: 1 loaf (12 slices)
