Glazed Ginger Carrots

The high level of beta-carotene in carrots lowers the risk of heart attacks. Ginger may have special qualities to soothe the digestive tract and ease joint pain and swelling.
Ingredients:
- 3 cups baby carrots, fresh
- ½ cup water
- ½ cup apple juice
- 2 teaspoons margarine
- 1 teaspoons ground ginger
- 1 Tablespoon lemon juice
- 2 teaspoons brown sugar
Directions:
- Cook the carrots in the water, juice, margarine and ginger over medium heat for 10 to 15 minutes.
- Reduce heat and add lemon juice and brown sugar, stirring for another 5 minutes.
