Glazed Ginger Carrots

The high level of beta-carotene in carrots lowers the risk of heart attacks. Ginger may have special qualities to soothe the digestive tract and ease joint pain and swelling.

Ingredients:

  • 3 cups baby carrots, fresh
  • ½ cup water
  • ½ cup apple juice
  • 2 teaspoons margarine
  • 1 teaspoons ground ginger
  • 1 Tablespoon lemon juice
  • 2 teaspoons brown sugar

Directions:

  1. Cook the carrots in the water, juice, margarine and ginger over medium heat for 10 to 15 minutes.
  2. Reduce heat and add lemon juice and brown sugar, stirring for another 5 minutes.
