Chili Mac

Adapted from The American Dietetic Association
Ingredients:
- 1 Tablespoon olive or vegetable oil
- 1 medium green bell pepper, chopped
- 1 pound fresh turkey breast for stir fry
- 1 jar (26- to 28-ounce) tomato-based pasta sauce
- 2 Tablespoons chili powder
- 8 ounces elbow macaroni, cooked and drained
Directions:
- In a 12-inch nonstick skillet, heat oil over medium-high heat.
- Add green pepper. Cook, stirring occasionally, for 3 minutes.
- Add turkey and cook, stirring occasionally, until done.
- Stir in pasta sauce and chili powder. Bring to a boil over high heat.
- Reduce heat to low. Simmer, covered, for 10 minutes.
- Stir in macaroni and heat through. Serve, if desired, with low-fat sour cream and shredded cheddar cheese.
Each serving includes two servings of vegetables.
