Chili Mac

Adapted from The American Dietetic Association

Ingredients:

  • 1 Tablespoon olive or vegetable oil
  • 1 medium green bell pepper, chopped
  • 1 pound fresh turkey breast for stir fry
  • 1 jar (26- to 28-ounce) tomato-based pasta sauce
  • 2 Tablespoons chili powder
  • 8 ounces elbow macaroni, cooked and drained

Directions:

  1. In a 12-inch nonstick skillet, heat oil over medium-high heat.
  2. Add green pepper. Cook, stirring occasionally, for 3 minutes.
  3. Add turkey and cook, stirring occasionally, until done.
  4. Stir in pasta sauce and chili powder. Bring to a boil over high heat.
  5. Reduce heat to low. Simmer, covered, for 10 minutes.
  6. Stir in macaroni and heat through. Serve, if desired, with low-fat sour cream and shredded cheddar cheese.

Each serving includes two servings of vegetables.
