Skillet Sweet Potatoes

Packed with beta-carotene, sweet potatoes are one of the most overlooked vegetables. They also contain phytoestrogens: which may help reduce certain cancer risks, as well as heart disease. They are a good source of vitamin C and fiber.

Ingredients

  • 1 pound sweet potatoes, peeled and sliced
  • ½ teaspoon finely shredded orange peel
  • ½ cup orange juice
  • 1 Tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Directions

  1. In a large skillet bring 1 inch of water to boiling. Add sweet potatoes; reduce heat. Cover and simmer for 20 minutes or until tender. Drain well.
  2. In a small bowl, combine orange peel, orange juice, honey, salt, cinnamon and nutmeg. Pour over drained potatoes in skillet.
  3. Cook and stir gently until bubbly. Simmer, uncovered, for 5 minutes or until potatoes are glazed, spooning sauce over potatoes occasionally.
