Marinated Vegetable Combo

Ingredients:

  • 2 cups raw broccoli
  • 10 cherry tomatoes, cut into halves
  • 1 yellow pepper, cut into strips
  • 1/3 cup white vinegar
  • ½ cup canola oil
  • 1 minced garlic clove
  • 1 Tablespoon chopped fresh dill or 1 teaspoon dried dill
  • 1 teaspoon dried basil
  • ¼ teaspoon pepper

Directions:

  1. Combine vegetables in a medium bowl.
  2. Mix marinade ingredients in separate bowl.
  3. Pour marinade over vegetables and toss well.
  4. Cover and refrigerate.

Serve this dish with warm, seven-grain rolls. End the meal with a scoop of lemon or raspberry sorbet topped with fresh raspberries and/or blackberries.
