Frozen Yogurt Sundae Sandwiches

Ingredients:
- 2 Tablespoons sugar
- 2 Tablespoons light corn syrup
- 1½ Tablespoons cocoa
- 1 Tablespoon low-fat milk
- 1 teaspoon margarine
- ¼ teaspoon vanilla extract
- 1¼ cups vanilla low-fat frozen yogurt, softened slightly for about 10 minutes.
- 20 chocolate wafer cookies or chocolate graham cracker squares
Directions:
- Combine sugar, corn syrup, cocoa and milk in a small, heavy saucepan. Bring to a boil over medium-low heat, stirring with a whisk. Cook two minutes or until thick, stirring constantly. Remove from heat and stir in margarine and vanilla. Cover and chill thoroughly.
- Spread 2 Tablespoons yogurt onto each of 10 cookies. Top with 1 teaspoon chocolate syrup and remaining cookies. Press gently. Freeze at least one hour.
- Once frozen, serve immediately or wrap individually in foil or plastic for storing several days in the freezer
