Frozen Yogurt Sundae Sandwiches

Ingredients:

  • 2 Tablespoons sugar
  • 2 Tablespoons light corn syrup
  • 1½ Tablespoons cocoa
  • 1 Tablespoon low-fat milk
  • 1 teaspoon margarine
  • ¼ teaspoon vanilla extract
  • 1¼ cups vanilla low-fat frozen yogurt, softened slightly for about 10 minutes.
  • 20 chocolate wafer cookies or chocolate graham cracker squares

Directions:

  1. Combine sugar, corn syrup, cocoa and milk in a small, heavy saucepan. Bring to a boil over medium-low heat, stirring with a whisk. Cook two minutes or until thick, stirring constantly. Remove from heat and stir in margarine and vanilla. Cover and chill thoroughly.
  2. Spread 2 Tablespoons yogurt onto each of 10 cookies. Top with 1 teaspoon chocolate syrup and remaining cookies. Press gently. Freeze at least one hour.
  3. Once frozen, serve immediately or wrap individually in foil or plastic for storing several days in the freezer
