Pineapple Salsa Olé

Ingredients:

  • 2 cups cubed fresh pineapple or canned pineapple chunks packed in pineapple juice, drained
  • 1/3 cup finely diced white onion
  • 2 Tablespoons fresh lime juice
  • 2 fresh jalapeno peppers, seeded and minced
  • ½ small red bell pepper, diced
  • 1 Tablespoon brown sugar
  • 1 Tablespoon undiluted frozen orange juice concentrate
  • 2 teaspoons rice wine or white wine vinegar
  • 1 Tablespoon fresh cilantro, chopped

Directions:

Combine all ingredients in a medium non-reactive saucepan. Simmer over low heat about 20 minutes. Serve warm with grilled meat, poultry or fish.

Yield: 2 cups
