Pineapple Salsa Olé

Ingredients:
- 2 cups cubed fresh pineapple or canned pineapple chunks packed in pineapple juice, drained
- 1/3 cup finely diced white onion
- 2 Tablespoons fresh lime juice
- 2 fresh jalapeno peppers, seeded and minced
- ½ small red bell pepper, diced
- 1 Tablespoon brown sugar
- 1 Tablespoon undiluted frozen orange juice concentrate
- 2 teaspoons rice wine or white wine vinegar
- 1 Tablespoon fresh cilantro, chopped
Directions:
Combine all ingredients in a medium non-reactive saucepan. Simmer over low heat about 20 minutes. Serve warm with grilled meat, poultry or fish.
Yield: 2 cups
