Grilled Vegetable Subs

Ingredients:
- 2 cloves minced garlic
- 2 halved serrano peppers
- 2 cups vegetable stock
- juice of ½ lime
- 1 teaspoon sugar
- ½ small eggplant
- ½ zucchini
- ½ summer squash
- 2 large portobello mushroom caps
- 2 toasted whole wheat hot dog buns
Directions:
- In a bowl, combine garlic, peppers, stock, lime juice and sugar.
- Thinly slice lengthwise eggplant, zucchini and squash.
- Marinate these and mushroom caps for at least 15 minutes and up to an hour.
- Remove from the marinade. Broil (or grill) the vegetables 6 to 8 minutes on one side; check for softness and slight char.
- Remove the mushroom caps and slice.
- Layer the eggplant, zucchini and squash and sliced mushroom on 2 toasted whole wheat hot dog buns.
