Grilled Vegetable Subs

Ingredients:

  • 2 cloves minced garlic
  • 2 halved serrano peppers
  • 2 cups vegetable stock
  • juice of ½ lime
  • 1 teaspoon sugar
  • ½ small eggplant
  • ½ zucchini
  • ½ summer squash
  • 2 large portobello mushroom caps
  • 2 toasted whole wheat hot dog buns

Directions:

  1. In a bowl, combine garlic, peppers, stock, lime juice and sugar.
  2. Thinly slice lengthwise eggplant, zucchini and squash.
  3. Marinate these and mushroom caps for at least 15 minutes and up to an hour.
  4. Remove from the marinade. Broil (or grill) the vegetables 6 to 8 minutes on one side; check for softness and slight char.
  5. Remove the mushroom caps and slice.
  6. Layer the eggplant, zucchini and squash and sliced mushroom on 2 toasted whole wheat hot dog buns.
