Fresh Berries with Sweet Vinegar Sauce

Serves 4

Sweet Vinegar Sauce Ingredients:

  • ¼ cup good-quality raspberry vinegar or balsamic vinegar
  • ¼ cup sugar
  • 3 drops vanilla extract
  • ¼ cup plain, non-fat yogurt
  • 1 cup raspberries
  • 1 cup blackberries

Directions:

  1. Combine vinegar and sugar in a small saucepan and bring to a boil.
  2. Boil for 4 minutes, stirring often. (Be prepared; the mixture will smell unpleasant as some of the vinegar's acid boils off, and it will reduce a little bit.)
  3. Turn off heat.
  4. Add vanilla, and slowly whisk in yogurt.
  5. Toss with berries and serve.

Makes 4 servings.
