Portobello Field Burger

Ingredients
- 4 Portobello mushrooms, stalks removed
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon lemon juice
- Olive oil spray
- 4 whole wheat rolls
- 4 teaspoons Dijon mustard
Directions
- Wipe off mushroom caps with a damp cloth
- Season each with salt and pepper and sprinkle with lemon juice
- Spray a large nonstick skillet with olive oil spray
- Heat skillet over medium high heat
- Place mushrooms in skillet, cap sides down, and cook for 2 minutes
- Flip mushrooms and cook on other side for another 2 minutes
- Slice each roll and spread each with 1 teaspoon mustard
- Place mushrooms on rolls
- May also be served with lettuce and tomato
