Portobello Field Burger

Ingredients

  • 4 Portobello mushrooms, stalks removed
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon lemon juice
  • Olive oil spray
  • 4 whole wheat rolls
  • 4 teaspoons Dijon mustard

Directions

  1. Wipe off mushroom caps with a damp cloth
  2. Season each with salt and pepper and sprinkle with lemon juice
  3. Spray a large nonstick skillet with olive oil spray
  4. Heat skillet over medium high heat
  5. Place mushrooms in skillet, cap sides down, and cook for 2 minutes
  6. Flip mushrooms and cook on other side for another 2 minutes
  7. Slice each roll and spread each with 1 teaspoon mustard
  8. Place mushrooms on rolls
  9. May also be served with lettuce and tomato
