Good-for-You Cornbread

Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup white sugar
  • 1 tsp. baking powder
  • 1 cup 1% fat buttermilk
  • 1 egg
  • ¼ cup tub margarine
  • 1 tsp vegetable oil (to brush the pan)

Directions:

  1. Mix together cornmeal, flour, sugar, and baking powder.
  2. In another bowl, combine buttermilk and egg. Mix lightly.
  3. Slowly add buttermilk and egg mixture to dry ingredients.
  4. Add margarine, and mix by hand or mixer for one minute.
  5. Bake for 20-25 minutes in an 8x8 inch oiled pan.
  6. Cool. Cut into 10 squares.
