Hot Apples with Oat Topping

Apples

  • 4 tart apples
  • 2 Tbsp. cornstarch
  • ¼ cup maple syrup
  • 2 tsp. lemon juice
  • 1 tsp. ground cinnamon

Oat Topping

  • 1 cup quick-cooking rolled oats
  • 2 Tbsp. maple syrup
  • 2 tsp. oil
  • 1 tsp. vanilla

To make the apples:

  1. Peel and core the apples, then cut into small chunks.
  2. Place in a 9" glass pie plate and toss with cinnamon.
  3. Stir well.
  4. Cover with vented plastic wrap and microwave on high for 6 minutes, or until the apples are tender.
  5. Let stand for 5 minutes.

To make the oat topping:

  1. Place the oats in another 9" glass pie plate.
  2. Drizzle with maple syrup, oil and vanilla. Mix well. Microwave on high for 1 minute.
  3. Stir well. Repeat 3 or 4 times, or until the oats are crisp and very lightly browned but not burned.
  4. Sprinkle over the apples.
  5. Makes 4 servings.
