Southwestern Chili Beans

Ingredients

  • 1 pound dried pinto beans, sorted and rinsed
  • ½ - 1 pound beef or turkey, try lean
  • ½ cup chopped onions
  • 1 (14 ounce) can stewed or whole tomatoes (diced or mashed), undrained
  • 1 cup canned or frozen green or red chili pepper, chili powder, if desired

Directions

  1. Cook dried beans as directed in package.
  2. In a large skillet brown ground beef or turkey and drain off fat. Rinse with hot water.
  3. Add beans, onion, tomatoes and chili pepper to meat and stir til mixed.
  4. To blend flavors, simmer 10 minutes until heated through.
